On the Lighter Side

It’s that time of year where most of us crave comfort food.  I will be the first to tell you that my go to is baked potato soup in a bread bowl or a good old fashioned chicken pot pie.  Tonight while the hubs is working out of town (something I have been getting use to) I decided I wanted something on the lighter side and quick!

The kids wanted tacos and well that sounds fantastic but I need a good earthy meal that fills that comfort food void but one that is also full of freshness and a little on the lighter side.

Like usual when I am in a funk I hop on Pinterest and hope to find a recipe that is inspiring.  Well I was in luck tonight! I have been dying to make a quinoa dish and well I found a Mexican quinoa recipe that was right up my alley.

I read through recipe and through the blog post and my favorite part was the inspiration to create something of my own out of this recipe.  You can find the original recipe here .I followed the recipe to a T and then I added the following:

  • wilted spinach
  • fresh lime juice squeezed on top
  • a little shredded cheese
  • cilantro
  • and I placed all in a portobella mushroom and cooked it at 400 until the cheese was meltedfullsizerender14

You guys this meal turned out fantastic!  It was quick, very simple and I loved the tips that went right along with it.  AND I think I am now inspired to experiment with quinoa more often!  Who knew it was so good?!  What was I waiting for?!

Oh! And this past weekend I stumbled upon this fantastic hummus at Costco.  You have to try it…not spicy but the perfect amount of hatch chili flavor!
