Food For Thought

Spice Up Your Life!

Sunday’s are generally my grocery shopping and food planning day for the week.  On my list every single week are the ingredients to make salsa. I don’t know about you but salsa is a staple in our house, it is at every party and we eat it just about every day.

I never really made my own salsa until a few years ago.  My Mother-In-Law is from Thailand and she makes the BEST food.  One of the things she always has to snack on is salsa.  Her salsa is not like any other that you have tried. What makes it special is the Thai Peppers.  We like to take a family trip to the Asian Market once a month to purchase the special peppers.  Just like a good salsa is sometimes hard to find so are good mother in laws.  I certainly got one of the best ones out there!

My husband and his siblings each have their own way of making their Mother’s salsa and over the years mine has evolved as well. I would love for you to give this recipe a try and perhaps make it your own and share!

  • 1 Onion
  • 1-2 Jalapeno peppers or Thai Peppers (start with one Thai Pepper and add because the heat from these little guys can be over the top)
  • 4 Cloves of garlic
  • Juice of 1 lime
  • 1/4 cup vinegar
  • 1 28oz can of crushed tomatoes
  • 1 14.5oz can of fire roasted tomatoes
  • 1 10 oz can of Rotel
  • 1 tsp of salt
  • 1 tsp cumin
  • A generous handful of cilantro

** TIP you can put a little water into a cup and place your fresh herbs in it and put into your refrigerator.  This will help them last much longer!

All you are going to do is throw all of these ingredients into a blender and blend until you reach the consistency that you like.  This really is a quick and easy recipe and it sure beats the ones you buy at the store.  I save all of my pickle jars and use them to store my salsa in or to give to others when I am in the salsa making mood.

I make this salsa for my daughter in college every time she  comes home and it has become a favorite among her friends.  I hope one day she takes this recipe and makes it her own for her family to enjoy.

If you enjoyed this recipe I would love for you like it, share it, pin it on Pinterest and please give me your feedback!
